Ingredients

  • 2 pounds ground beef
  • 1-ounce package taco seasoning mix
  • 1 24-ounce jar spaghetti sauce
  • 2 cups crushed soda crackers or saltines
  • 1 bag tortilla chips
  • 2 cups hot cooked rice
  • 1 head iceberg lettuce
  • 2 cups diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped onion
  • 1 cup sliced, pitted ripe olives
  • 1 cup diced green pepper
  • 1 cup diced celery
  • 1½ cups shredded Cheddar cheese
  • 1 (8-ounce) jar salsa

Directions

In a 12-inch skillet, brown the ground beef over medium-high heat. Add the taco seasoning and spaghetti sauce and heat to boiling. Reduce heat to low; simmer, uncovered, until most of the liquid evaporates.

Mix the crushed crackers and tortilla chips in a bowl. Place the ground-beef mixture, rice, and remaining ingredients in individual bowls.

Layer the lettuce, crushed crackers/chips, meat mixture, rice, tomatoes, carrots, onions, olives, pepper, celery, cheese, and salsa—in the order you like. There is no wrong way to make a haystack! Serves six.
