One of the most persistent images people have of a low-carb diet is that it consists of wall-to-wall steaks and bunless burgers. We know that's not true; we eat a fantastic variety of foods. But the idea persists, largely because we've had it drilled into our heads that beef is evil and unhealthy and bad for us, so the idea of eating it without fear is exotic.
