BAKED HALIBUT


2 SERVINGS

2 (6-ounce) boneless halibut fillets

1 teaspoon extra-virgin olive oil

2 small garlic cloves, minced

2 teaspoons lemon zest

2 tablespoons fresh lemon juice

1 tablespoon chopped parsley

Dash of sea salt

Freshly ground black pepper

Preheat the oven to 400ºF.

Place the halibut skin side down and drizzle with the oil in a large nonstick baking dish.

Combine the garlic, lemon zest, lemon juice, and parsley in a bowl and mix well.

Coat the halibut with the garlic mixture and season with salt and pepper.

Bake for 13 to 15 minutes, until the halibut flakes easily.
