FOREWORD

Our first plan was to compile a book of food and beverage recipes that were strictly of Hawaiian origin, but we soon realized that this would not give a true picture of the glorious and exotic array of foods to be found here. Many peoples from many lands have contributed to the Hawaiian cuisine, so we have broadened our scope to include all the well-known, popular dishes of the Islands regardless of their origin.

We have endeavored to adapt the recipes to our modern pace and our modern kitchens. We believe that whatever effort is required in the preparation of these foods will be more than justified by the results.
