garlic bread

Serves 2

Preparation time 5 minutes

Cooking time 4 minutes

4 slices of bread such as ciabatta, sourdough, French bread or pitta

2–3 garlic cloves, peeled and halved

125 ml (4 fl oz) olive oil

a little chopped flat leaf parsley (optional)

Toast the bread on both sides under a preheated medium grill until golden. While the bread is still warm, rub one side with the cut sides of the garlic.

Put the warm toasted bread on a plate and drizzle 2 tablespoons of the olive oil over each slice. Sprinkle with salt and a little chopped parsley, if liked, and serve as a starter, snack or with any pasta dish or salad.

For tomato & basil bread, toast the bread as above and rub with the garlic, then mix the oil with 2 teaspoons sun-dried tomato purée (from a tube) and 2 tablespoons chopped basil. Drizzle over the toasted bread, then serve.
