Preparation time 3 minutes
16 mint leaves (including stalks), plus extra sprigs to decorate
1 lime, cut into wedges
4 teaspoons cane sugar
crushed ice
5 measures white rum soda water, to top up
Muddle the mint leaves, lime and sugar in the bottom of 2 highball glasses using a muddling stick or a long-handled teaspoon, gently pressing down and stirring to release the flavours. Fill the glasses with crushed ice.
Add the rum, stir and top up with soda water.
Decorate with mint sprigs and serve.
For limon mojito, a citrus version of the classic mojito, muddle 2 lime quarters with 4 teaspoons soft brown sugar and 16 mint leaves in the bottom of 2 highball glasses. Add crushed ice and replace the white rum with 4 measures Limon Bacardi. Stir and top up with soda water, if liked. Decorate with lemon and lime slices and drink through straws.
