This juice balances the sweetness of carrot and pineapple with the pungency of turmeric. The brilliance of the orange carrot and hot yellow of the turmeric make this delicious juice a treat for your eyes, too.
2 pounds carrots (about 10 medium), chopped
4 cups fresh or frozen cubed pineapple
2 tablespoons ground turmeric
Run the carrots, pineapple, and fresh turmeric through a juicer into a glass. If you are using ground turmeric, add it to the juice and whisk to incorporate.
If you do not have a juicer, simply combine the carrots, pineapple, fresh or ground turmeric, and 1 tablespoon water in a blender and blend until smooth. Strain this mixture through a fine-mesh sieve or a colander lined with cheesecloth to get the pure juice.
