When thinking about dressing up oatmeal, most of us go to sweet flavors. This recipe goes against that impulse by adding mushrooms, goat cheese, red pepper flakes for heat, and a bit of honey for sweetness. Savory oatmeal is so delicious, you will want to eat it any time of day!
½ teaspoon honey
2 tablespoons skim milk
½ cup old-fashioned rolled oats
1 teaspoon olive oil
½ cup sliced cremini mushrooms
⅛ teaspoon chopped fresh thyme
⅛ teaspoon red pepper flakes
1½ tablespoons crumbled goat cheese
In a medium saucepan, combine the honey, milk, and ¾ cup water and bring to a boil over medium heat. Stir in the oats. Reduce the heat to medium and simmer, stirring occasionally, for 5 minutes.
Heat the olive oil in a skillet over medium-high heat. Add the mushrooms, thyme, and red pepper flakes and cook, stirring occasionally to prevent burning, until golden and crispy, about 5 minutes.
Top the creamy oatmeal with the mushrooms and crumbled goat cheese.
