This recipe has all the flavor of granola, but you eat it hot. The oats are soft rather than crispy, but the nuts and dried fruits give the oatmeal great texture. Make sure you buy a supply of nuts and dried fruits, because “Granola” Oatmeal could become your go-to breakfast.
2 cups unsweetened almond milk
1 cup quick-cooking oats or instant oatmeal
1 teaspoon pure vanilla extract
1½ tablespoons pure maple syrup
1 tablespoon finely chopped pecans
1 tablespoon finely chopped cashews
1½ teaspoons raisins
1½ teaspoons unsweetened dried cranberries
1½ teaspoons unsweetened dried cherries
¼ teaspoon ground cinnamon
Bring the almond milk to a boil in a medium pot.
Stir in the oats, vanilla, and maple syrup. Cook for 3 minutes.
Reduce the heat to mediium and add the nuts, dried fruit, and cinnamon. Simmer for 5 minutes, stirring occasionally. Put half the oatmeal in a bowl and enjoy. Save the rest for another day.
