BANANA-CITRUS YOGURT

This yogurt treat has a lot going on—the tartness of grapefruit, the creaminess of banana, the lift of mint, and the crunch of macadamia nuts provide layered flavor and texture.

1 medium pink grapefruit

1 teaspoon pure vanilla extract

1 tablespoon honey

1 tablespoon chopped fresh mint

1 banana, sliced

2 cups plain nonfat Greek yogurt

1½ tablespoons chopped macadamia nuts

Slice off the skin and white pith from the grapefruit. Cut the segments from their surrounding membranes to release the grapefruit segments into a medium bowl.

Add the vanilla, honey, banana, and mint. Toss gently.

Spoon the fruit mixture over the yogurt and top with the macadamia nuts.
