This recipe converts humble chickpeas into a crispy, tart, and sweet treat. You might want to consider doubling the recipe. You’ll be happy to have plenty of this delicious snack on hand.
1 (15-ounce) can chickpeas, drained and rinsed
½ cup balsamic vinegar
2 tablespoons olive oil
1 tablespoon pure maple syrup
¼ teaspoon freshly ground black pepper
Combine the chickpeas and vinegar in a large bowl. Cover and marinate the chickpeas in the refrigerator for 1 to 2 hours.
Preheat the oven to 375ºF. Line a rimmed baking sheet with parchment paper.
Drain the marinated chickpeas and return to the bowl. Add the olive oil, maple syrup, and pepper and toss.
Place the chickpeas on the lined baking sheet. Bake for 25 minutes, or until golden.
