CHEF JUDSON’S CITRUS PROTEIN BAR

My health bars surpass any protein bars you can find in flavor and nutrition. I use only natural sources of sweetness. Wrap them in wax paper, and store them in the refrigerator. Citrus Protein Bars freeze well, too, so make a big batch!

¼ cup quinoa, uncooked

¼ cup macadamia nuts

¼ cup unsweetened coconut flakes, chopped

⅓ cup chickpeas, drained and rinsed

⅓ cup dried pineapple, finely chopped

1 scoop vanilla protein powder (use your favorite brand)

1 tablespoon lime zest

1 tablespoon lime juice

⅓ cup pure honey

1 tablespoon coconut oil

1 egg white

Preheat the oven to 350ºF.

On a lined cooking sheet, add the quinoa and macadamia nuts. Toast for 5–8 minutes or until golden. Add the coconut to the sheet tray, and toast for an additional 2 minutes.

Add the chickpeas to a bowl, and mash them with a fork.

Add the toasted quinoa mixture, dried pineapple, protein powder, lime zest, and lime juice to the bowl. Mix evenly.

Add the honey and oil, and mix well. Add the egg white.

Press the mix into an 8-by-8 lined and oiled baking dish.

Reduce the temperature to 300-degrees, and bake for 35–40 minutes or until golden. Cool and cut into 8 2-by-4-inch bars.
