2 tablespoons olive oil
1 tablespoon minced garlic
1 tablespoon lemon zest
Juice of 1 lemon
3 tablespoons honey
1 tablespoon finely chopped fresh thyme
1 teaspoon chopped fresh parsley
2 tablespoons lemon pepper seasoning with no salt
1½ teaspoons Bayou Cajun Spice Blend (here)
8 chicken breasts, boneless and skinless
Nonstick cooking spray
2 lemons, halved
In a large bowl, combine the olive oil, garlic, lemon zest, lemon juice, honey, thyme, ½ teaspoon of parsley, lemon pepper, and Bayou Cajun Spice Blend. Add the chicken to the bowl and, using your hands, coat the chicken with all the ingredients. Cover and refrigerate for 10 to 20 minutes. The longer you can let the chicken, marinate the better.
Remove the chicken from the refrigerator. Spray a baking sheet with cooking spray. Add the coated chicken to the baking sheet. Put the 4 lemon halves on each side of the baking sheet, cut-side down.
Roast the chicken for 30 to 35 minutes, or until the chicken is thoroughly cooked. Turn the pieces once during roasting. The chicken should be moist and juicy and have a crisp, dark golden color on both sides. When the chicken is done, the internal temperature of the meat will be 165ºF.
Sprinkle the chicken with the remaining ½ teaspoon of parsley, and serve straight from the oven.
