MAPLE-ROASTED SWEET POTATOES

How sweet it is! You can indulge a little in Phase 2, and this dish is a perfect way to do it. The maple syrup complements the sweetness of the potatoes, the smoked paprika balances that sweetness, and the black sesame seeds are the finishing touch for texture, appearance, and flavor.

1 tablespoon olive oil

½ teaspoon smoked paprika

¼ cup pure maple syrup

⅛ teaspoon sea salt

2 sweet potatoes, peeled and cut into ½-inch wedges

2 tablespoons black sesame seeds

Preheat the oven to 400ºF. Line a baking sheet with parchment paper.

In a large bowl, combine the olive oil, paprika, maple syrup, and sea salt. Add the sweet potatoes and toss until they are fully coated.

Spread the sweet potatoes in a single layer on the lined baking sheet and roast for 25 to 30 minutes, stirring gently every 5 to 10 minutes.

Sprinkle the cooked sweet potatoes with the sesame seeds. Serve hot from the oven or chilled.
