Imagine tea with lemon turned into a coarse sorbet. That’s what granita is, and it is a breeze to make. It takes high tea to a new level!
1 tablespoon loose Earl Grey tea, in an infuser, or 1 Earl Grey tea bag
1 teaspoon lemon zest, plus more for garnish
½ cup fresh lemon juice (from about 3 lemons) ½ cup raw honey
In a small pot, bring 4 cups of water to a boil. Remove from the heat and add the tea. Steep for 4 minutes. Remove the tea from the liquid and let it cool for up to 10 minutes. Add the lemon zest, lemon juice, and honey and stir until all the ingredients have dissolved. Refrigerate for 45 minutes.
Transfer to a freezer-friendly container with a lid and freeze for 1 hour. Remove from the freezer and break up the ice that has formed at the top with a fork. Return to the freezer and repeat the breaking of the ice every hour for 2 to 3 hours, until the granita is flaky and uniformly frozen.
Serve by scraping out the granita with a spoon and garnishing with lemon zest.
