¼ cup light coconut milk
½ cup frozen blueberries
1 cup cubed frozen banana
½ teaspoon lemon zest
1 tablespoon fresh lemon juice
½ teaspoon pure vanilla extract
1 teaspoon honey
2 tablespoons crushed reduced-fat vanilla wafer cookies (optional)
In a high-powered blender, combine all the ingredients except the vanilla wafer cookies and lemon zest. Hold back a few blueberries for garnish. Blend until thick, rich, and creamy.
