I call this “ice cream” decadent for a reason—it’s that creamy and delicious! It’s hard to believe what a caloric bargain it is. Sometimes even a couple of teaspoons of this dessert is enough to satisfy my sweet cravings.
2 or 3 overripe bananas, peeled and frozen
1 tablespoon no-sugar-added natural peanut butter (creamy or chunky)
1 teaspoon pure vanilla extract
⅛ teaspoon ground cardamom
2 tablespoons raw honey
2 tablespoons dark chocolate chips
Put the frozen bananas in a food processor and puree, scraping down the sides periodically, until the bananas are rich and smooth in consistency. Add the peanut butter, vanilla, cardamom, and honey and puree.
Transfer the “ice cream” from the food processor to a freezer-friendly dish or container. Fold in the chocolate chips and freeze for up to 3 hours. Enjoy one scoop of this deliciousness!!
