MOROCCAN SPICE BLEND

The word Morocco evokes an exotic, mysterious place. Couscous and beef and chicken tagines are well known dishes from Moroccan cuisine. The layered quality of this blend is memorable as it mixes sweet, pungent, and hot flavors. It pairs well with seafood, lamb, poultry, beef, veggies, beans, and lentils.

2 tablespoons ground cumin

1 tablespoon paprika

1 tablespoon ground coriander

1 teaspoon freshly ground black pepper

1 teaspoon ground cinnamon

1 teaspoon ground allspice

¼ teaspoon ground cloves

⅛ teaspoon cayenne pepper, or to taste

Mix together all the ingredients in an airtight container and store in a cool, dry place away from heat and light.
