SERVES 1
1 tablespoon coconut oil (if using sweet potato) or ghee (for white potato) (see here)
½ sweet potato or white potato, shredded and excess water squeezed out
Salt
¼ pound all-natural, grass-fed ground beef
Freshly ground black pepper
2 handfuls of fresh spinach
¼ avocado, peeled
In a large sauté pan, melt the coconut oil over medium-high heat, swirling to coat the pan. Add the sweet potato and cook, stirring, until crispy and browned. Season lightly with salt. While the potato cooks, heat a second pan over medium heat and cook the ground beef all the way through, seasoning with salt and pepper. Toss the spinach in with the beef and stir frequently until it has wilted. Serve beef and sweet potato hash side by side on breakfast plate, and top with avocado.
