Coconut oil spray
2 tablespoons ghee (see here), melted
1 large sweet potato, shredded
12 large eggs
Salt and freshly ground black pepper
Preheat the oven to 350ºF. Use the coconut oil spray to grease a 12-cup muffin tin. In a medium bowl, combine the ghee and sweet potato and toss to combine. Evenly distribute the potato among the prepared muffin cups. Pack down the potato with your hands or with the bottom of a small cup to form a nest. Crack an egg into each hole and bake for 35 to 40 minutes, or until the whites are cooked. Season with salt and pepper.
