Breakfast Tacos

SERVES 2

4 bacon slices

4 corn tortillas

4 large eggs

¼ cup cheese or ½ mashed avocado

Salt and freshly ground black pepper

Put the bacon in a skillet, then set the skillet over medium heat. (This will keep the bacon flat instead of curling.) Cook until the bacon is to your liking, then transfer to paper towels and roll up. Keep the bacon fat in the pan. In a second, larger pan, warm the tortillas over medium heat, overlapping them as little as possible. In the meantime, scramble the eggs in the pan with the bacon fat. Flip the tortillas and add the cheese of your choice on top. You can also skip the cheese and put avocado on top at the end. When the eggs are done, evenly distribute them among the tortillas. Once the bottom of the tortillas are a little brown, remove from the pan and top with salt, pepper, and a slice of avocado if you like. Top with the bacon and serve.
