Chimichurri

SERVES 8 TO 12

1 bunch fresh parsley

3 garlic cloves

¼ cup olive oil

1 tablespoon apple cider vinegar

1 teaspoon coconut vinegar

Juice of ½ lemon

½ teaspoon freshly ground black pepper

¾ teaspoon sea salt

½ teaspoon dried oregano

½ teaspoon dried basil

¾ teaspoon chipotle chile flakes

1 tablespoon chopped fresh onion

1 teaspoon honey

Combine the parsley, garlic, olive oil, vinegars, lemon juice, pepper, salt, oregano, basil, chile flakes, onion, and honey in a food processor and process until smooth. Serve with beef, pork, or vegetables. Store in the fridge for up to 5 days.

Sauces, Dressings, and Dairy Substitutes

While some of these are available in store-bought versions, you’ll never get quite the same fresh flavor as homemade. Make them a day or two ahead of time and bring to room temperature before adding to your next creation.
