Curry Turkey Burgers with Caramelized Onions

MAKES 8 BURGERS

2 teaspoons ghee

1 large yellow onion, chopped

2 medium carrots, finely grated

1 medium zucchini, coarsely grated

1 pound lean ground turkey

2 tablespoons nutritional yeast

1 large egg

½ teaspoon sea salt

½ teaspoon freshly ground black pepper

1 teaspoon curry powder

1 bunch rainbow chard or 1 head romaine lettuce, washed and dried, leaves intact

In a large pan, melt the ghee over medium heat. Add the onion and cook, stirring occasionally, for 20 to 30 minutes, or until the onion is translucent and very soft. In a large bowl, combine the carrots, zucchini, ground turkey, nutritional yeast, egg, salt, pepper, and curry powder and mix well with your hands. Place another large pan or grill pan over medium heat. Divide the meat mixture into 8 portions and form them into patties. Once the pan is hot, cook the burgers until each side is brown and the burger stays together. Top each burger with caramelized onions and serve wrapped in a large leafy green such as rainbow chard or romaine lettuce.
