Roasted Butternut Squash

SERVES 6 TO 8

1 butternut squash, peeled, seeded, and cubed

2 tablespoons coconut oil, melted

Preheat the oven to 400ºF. Toss the butternut squash with the coconut oil in a bowl. Spread the squash on a baking sheet and roast for 40 to 45 minutes, or until the edges turn brown.
