½ banana, plus sliced banana for topping
1 large egg
1 tablespoon unsweetened cocoa powder
1 tablespoon pure maple syrup
2 tablespoons coconut flour
1 tablespoon cocoa nibs, plus more for topping
1 tablespoon semi-sweet chocolate chips
Almond butter, for topping
Honey, for topping
Mash the banana in a coffee mug with a fork. Add the egg, cocoa powder, maple syrup, coconut flour, cocoa nibs, and chocolate chips and stir well. Microwave for 2 minutes, or until the middle of the mixture appears cooked. If sharing, spoon the cake into two bowls (otherwise, just eat it straight from the mug!). Top with almond butter, sliced banana, cocoa nibs, and a drizzle of honey.
