Chocolate Chia Pudding

SERVES 2

¼ cup chia seeds

½ cup unsweetened almond milk

2 tablespoons cacao powder

2 tablespoons pure maple syrup

½ cup fresh berries

½ banana, sliced

2 tablespoons cocoa nibs

Combine the chia seeds, almond milk, cacao powder, and maple syrup in a small bowl. Stir and refrigerate for 10 minutes, or until the mixture thickens. Divide between two bowls and serve topped with berries, banana, and cocoa nibs. I often top the dessert with an additional bit of healing herbs such as he shou wu, Mucuna pruriens, or triphala.
