Chocolate Chip Peanut Butter Cookies

MAKES 20 SMALL COOKIES

1 cup natural peanut butter (smooth)

¾ cup coconut sugar

1 large egg

½ teaspoon baking soda

1 teaspoon pure vanilla extract

Pinch of sea salt

¾ cup large chocolate chip chunks, or ½ cup regular-size chocolate chips

Preheat the oven to 350ºF. Grease a large baking sheet. In a food processor, mix together the peanut butter, coconut sugar, egg, baking soda, vanilla, and salt. Once the mixture is well blended, add the chocolate chips and mix until evenly distributed. Roll the dough into 20 balls, transfer to the prepared baking sheet, and flatten slightly with a fork or spoon. Bake for about 12 minutes, or until the edges brown. Transfer to a wire rack and let cool.
