JAPANESE CHICKEN NOODLE

SEASONINGS:

1 Tbsp. minced fresh ginger

VEGETABLES:

3 cups sliced green cabbage, 2 cups sliced shiitake mushroom caps, 2 cups thinly sliced carrots

Pasta:

3 cups cooked udon noodles or whole-wheat spaghetti

FLAVOR BOOST:

2 Tbsp. white miso

SEASONINGS:

1 tsp. dried marjoram, 1 tsp. dried oregano

VEGETABLES:

3 cups sliced fennel, 3 cups chopped broccolini (1-inch pieces), 2 cups chopped fresh tomatoes

15-oz. can cannellini beans, rinsed

FLAVOR BOOST:

¼ cup pesto

SEASONINGS:

1 tsp. dried thyme, 1 bay leaf

VEGETABLES:

2 cups each sliced celery, sliced carrots & frozen peas

Pasta:

3 cups cooked whole-wheat egg noodles

FLAVOR BOOST:

¼ cup chopped fresh parsley

Moroccan Chicken & Sweet potato

SEASONINGS:

1½ tsp. ground cumin, ½ tsp. ground cinnamon, ¼ tsp. cayenne

VEGETABLES:

3 cups diced sweet potato, 2 cups diced bell pepper, 2 cups green beans (2-inch pieces)

beans:

15-oz. can chickpeas, rinsed

FLAVOR BOOST:

1 tsp. harissa, or to taste

Chipotle Chicken & Vegetable

SEASONINGS:

2 tsp. finely chopped chipotle chiles in adobo (or 1 tsp. ground chipotle), 1½ tsp. ground cumin, ¼ tsp. allspice

VEGETABLES:

3 cups corn kernels, 2 cups sliced zucchini, 2 cups halved cherry tomatoes

GRAINS:

3 cups cooked brown rice
