Here’s the way to turn just about any citrus fruit into perfect bites. Cut the top and bottom off the fruit and set on a cutting board. Starting from the top, use a paring knife to remove the peel from top to bottom, sculpting the flesh so as not to waste any precious fruit. Remove all the white pith. Free the segments by cutting down along the membrane on both sides. Work your way around the fruit. The remaining membrane holds lots of delicious juice, so squeeze it over a bowl to capture it.
