FENNEL

WE’RE ATTRACTED TO fennel the way we’re drawn to the ocean: They both have something primal and irresistible. Because it grows wild in so many climates, fennel is a true survivor. Greek and Roman myth has Prometheus stealing fire from the gods by hiding it in… a fennel stalk! In fact, the alluring anise flavor of this ancient plant attracts us.

I’m fascinated by plants with such strong properties. Like mint, nettles, and horseradish, fennel is invasive, and like aggressive plants everywhere, it pulls nutrients from the ground that enhance its flavor. We know the evolution of these plants is linked to ours. The unique strength of its flavor led growers to develop this vegetable with big meaty bulbs and lacy, tender fronds and an almost endless variety of uses, both cooked and raw.
