MAKES 1 CUP
SOMETHING MAGICAL HAPPENS when you heat and season raw almonds. They crisp up and become more flavorful after they’re cooked, so make them at least an hour before serving.
1 tablespoon olive oil
1 cup whole raw almonds
1 heaping teaspoon mild curry powder
Salt
1 teaspoon honey
Fresh lemon juice
Combine the oil, almonds, curry powder, and a pinch of salt in a large skillet. Cook over medium-high heat, tossing often, until the almonds just start to brown. Add the honey and let it caramelize, about 2 minutes. Add a splash of lemon juice and toss, then transfer to a plate to cool. The nuts will keep, tightly covered, for a few weeks.
