SHRIMP STOCK

MAKES ABOUT 4 CUPS

SHRIMP STOCK IS SO FAST and easy, but I do recommend making it the same day you plan to use it for the freshest flavor.

Shells from about ¾ pound shrimp

4 scallions, chopped

2 carrots, thinly sliced

1 stalk celery, sliced

½ small onion, chopped

Pinch coriander seeds

1 sprig rosemary

1 sprig thyme

Salt and pepper

Combine the shrimp shells, scallions, carrots, celery, onions, coriander seeds, rosemary, and thyme in a medium saucepan. Cover with 4½ cups water and simmer for about 30 minutes. Strain into a bowl, discarding the solids, and add salt and pepper. Use immediately.
