Think back to a time when people said: “Kale chips? Really? Are they any good?” Nowadays people recognize how easy to prepare and tasty they are. Well, these sweet Parsnip Chips are every bit as addictive and will be eaten as fast as you can make them. The chips are deep-fried, but if they’re drained well and patted dry on a paper towel, they come out amazingly light and crispy.
Grapeseed or peanut oil for frying
3 parsnips, peeled and sliced paper-thin
Salt
Heat about 2 inches of oil to about 375°F in a medium saucepan. Fry the parsnips, a few slices at a time, until they turn golden around the edges, 1 to 2 minutes. They will crisp up as they drain on paper towels. Sprinkle with salt.
