BOWL OF PEAS, RICE & PICKLED ONIONS

SERVES 4

THIS SIMPLE DISH IS INSPIRED BY the way people commonly eat inexpensively and every day in India and Japan. Making a bowl of healthy rice is easy (I happen to love my programmable rice cooker), and it can be topped with flavorful vegetables of all kinds, raw, cooked, or preserved. The luxury of this dish is to enjoy fresh peas by the spoonful.

1½ cups peas, blanched

Olive oil

1 to 2 teaspoons pickling liquid from Pickled Onions (here)

Salt

4 cups cooked basmati rice

12 slices Pickled Onions (here)

1 tablespoon thinly sliced scallion greens

In a small bowl, season the peas with oil, the pickling liquid, and salt. Spoon the rice into 4 bowls, then top with the peas, pickled onions, and scallions.
