Crustless Spinach Quiche

Cooking Time: 4-6 hours

Ideal slow cooker size: 3-qt.

2 10-oz. pkgs. frozen chopped spinach, squeezed dry

2 cups cottage cheese

half stick (¼ cup) butter, cut into pieces

1½ cups sharp cheese, cubed

3 eggs, beaten

¼ cup flour

1 tsp. salt

  1. Combine ingredients thoroughly.
  2. Pour into a greased slow cooker. Cover.
  3. Cook on low 4-6 hours.

Variations:

  1. Recipe may be doubled for a 5-qt. slow cooker.
  2. Omit cottage cheese. Add 1 cup milk, 1 tsp. baking powder, and raise the quantity of flour to 1 cup. Reserve cheese and sprinkle on top.
