Potatoes and Spirals Bake
No Greek seasoning? Use Italian seasoning! Makes 2 servings
Ingredients:

2 cups diced potatoes
•
10 cherry tomatoes, halved
•
1 cup worth zucchini spirals
•
1/1 tbsp hemp or chia seeds
•
1 tbsp pine nuts
•
1 tablespoon Greek seasoning
•
½ low fat plain Greek yogurt
Directions:
In pot, mix together potatoes, cherry tomatoes, spirals, chia or hemp seeds, pine nuts Greek seasoning, and yogurt.
Cook on high pressure 5 minutes.
