Kale and Artichoke Linguine Casserole
Add some lemon peel and sweet ginger! Makes 4 servings
Ingredients:
•
1 tbsp extra virgin olive oil
•
4 oz. linguine, prepared
•
3 Campari tomatoes, quartered
•
½ cup matchstick carrots
•
1 diced shallot
•
2 cups artichokes, chopped
•
1 teaspoon garlic, minced
•
1 ½ cups water
•
½ teaspoon thyme
•
½ teaspoon oregano, chopped
•
1 teaspoon lemon juice
•
Shredded mozzarella or parmesan cheese for top
Directions:
In pot, combine oil, tomatoes, carrots, artichokes, shallot, garlic, water.
Toss in cooked linguine, thyme, oregano, lemon juice.
Cook on high pressure 4 minutes.
