Shirataki Noodles

For extra flavor, add 1 tsp veg. bouillon paste (such as Better Then Bouillon) Makes 2 servings.
Ingredients:
        1/4 cup diced onions
        1 teaspoon minced garlic
        1.2 tsp red pepper flakes or chili oil
        1/3 tsp ground ginger
        1/2 teaspoon pepper
        1/3 cup diced tomatoes
        1/3 cup diced eggplant
        1/2 cup edamame or snow peas
        ½ cup matchstick carrots
        4 cups organic vegetable broth
        1/3 cup shirataki noodles
        1 can cream of condensed mushroom soup
Directions:
In pot, mix onions, garlic, flakes or oil, ginger, pepper, tomatoes, eggplant, edamame, matchstick carrots, vegetable broth, noodles, condensed soup.
Cook on high heat 4-5 minutes.
