Sriracha Thyme Casserole

Throw some bell peppers or jalapenos in! Makes 2 servings.
Ingredients:
        1/2 tablespoon butter or ghee
        1/3 tbsp onion, grated
        1/2 teaspoon garlic, minced
        1 cup sweet potato spirals
        1 burger crumble
        1/4 cup coconut milk
        ½ tbsp tomato paste
        ½ tsp sriracha
        1 1/2 teaspoons tapioca flour
        1/4 teaspoons thyme, diced
        1/3 teaspoon rosemary
        1/4 teaspoon red pepper flakes
Directions:
Mix sweet potato spirals, flour, oil together.
In pot, melt butter and add julienned onions then sauté 1 minute.
Whisk in spirals, garlic, coconut milk, stir for 30 seconds.
Whisk in diced oregano, diced rosemary, tapioca flour, red pepper flakes.
Cook on high 30-45 minutes.
