Quick & Easy I.P Veggie Curry
Also great with a tahini sauce! Makes 2 servings.
Ingredients:
•
1/2 cups broccoli trees
•
1/3 cup plum tomatoes, quartered
•
1 clove garlic, chopped
•
¼ cup julienned caramelized onions
•
1 ½ cans full fat coconut milk
•
2 tablespoons curry sauce
•
1 tbsp parsley, chopped
•
½ tbsp chopped Italian oregano
Directions:
In pot, combine broccoli, tomatoes, garlic, onions, coconut milk withhold the cream, parsley, oregano.
Cook 7-8 minutes on manual.
Using a strainer remove veggies.
Add in milk cream.
Sauté 8-10 minutes until sauce reaches desired thickness.
Return veggies, mix well, serve over rice!
