Makes 16
1/2 c. butter, softened
1-1/4 c. sugar
2 eggs, beaten
1-1/4 c. sweet potatoes, peeled, cooked and mashed
1-1/2 c. self-rising flour
1 T. baking powder
1/4 t. salt
1/8 t. baking soda
1 t. cinnamon
1/4 t. nutmeg
1/4 t. allspice
1 c. milk
1/4 c. walnuts
1/4 c. raisins
Combine all ingredients in a large bowl. Fill greased muffin tins 2/3 full. Bake at 400 degrees for 25 minutes.
Bring along the sweetest pats of butter to serve with muffins or rolls. Butter slices cut with mini cookie cutters or pressed with cookie stamps make it easy to be creative.
