Potato Bread

Makes 2 loaves

3 potatoes, peeled and sliced

1 T. active dry yeast

1 T. sugar

1/2 c. very warm water

4 to 6 c. all-purpose flour, divided

1 t. salt

Boil potatoes and drain, reserving one cup cooking water. Mash potatoes and reserve 1-1/2 cups; use any remaining potatoes for another recipe. Combine yeast and sugar in warm water, 110 to 115 degrees. Stir to dissolve; let stand 5 minutes, or until foamy. Add reserved water and mashed potatoes, 2 cups flour and salt. Beat mixture until well blended. Set aside, covered, and let rise for 45 minutes. Add enough of the remaining flour to form a stiff dough. On a lightly oiled surface, knead dough for 5 minutes. Place dough in an oiled bowl, turning to coat. Cover loosely and let rise until double in size, about one hour. Punch down dough and shape into 2 loaves. Place in 2 lightly oiled 9"x5" loaf pans and let rise again until doubled. Bake at 350 degrees for 50 minutes, or until loaves sound hollow when tapped.
