Makes 4 servings
1 t. sugar
1 t. salt
1-1/2 T. chili powder
1/4 to 1/2 t. ground cumin
2 sweet potatoes, thinly sliced
Combine sugar, salt, chili powder and cumin in a small bowl; set aside. Place potato slices on a lightly greased baking sheet. Sprinkle lightly with half of sugar mixture. Bake at 325 degrees for 15 minutes; turn slices over and sprinkle with remaining sugar mixture. Bake an additional 15 minutes. Remove from oven and place on wire rack to cool.
Make these into a delightful dessert...sprinkle with brown sugar and cinnamon instead of the spices, then serve with warmed marshmallow creme for dipping!
