In the fall and winter months (and sometimes even in the summer), I’m so easily drawn to a steaming, fragrant bowl of soup. From puréed to broth-based to decadently rich, soup is the ultimate cold weather luxury and emotional pacifier. Beginning with a strong base, aggressive seasonings, and, in this case, the right variety of pumpkin for the job, soups inspired from all corners of the world will massage the kinks out of a bad day, warm your bones, and fill you up. With the ability to be puréed into silky submission or stay put as a meaty cube, pumpkin’s malleability is showcased at first soupy slurp. Loaded with produce, grains, and legumes, the following chapter is filled with wholesome nourishment for when you need it most.
