Method
Blend the garlic, chili, orange puree, and juice with parsley, salt, and black pepper
Pork the duck leg with a sharp knife to allow maximum absorption
Place the poked legs in a bowl, pour the blended mixture over and leave it to sit for 1 to 2 hours
Remove and rinse
Arrange them on an oven dish, season with salt and pepper, and pour enough duck fat to cover it
Cover with foil. Then, place in the oven for 2 hours – do not be tempted to check
After 2 hours, remove the foil. Increase the heat to brown
Serve
