Over a double boiler, use a hand mixer and whip the yolks, lemon
juice, salt, and pepper
Continue until the mixture is a thick lemony color
Keep at it and gradually start adding the butter until the sauce is creamy and silky smooth
Pour in a bowl and store in a warm place until service is ready
