Melt the chocolate over a double with the butter
In another bowl, whisk the yolks, sugar, vanilla, and coconut cream over a double boiler until white, fluffy and aerated
Scoop this mix into the chocolate mixture and mix well using a spatula
Whisk the egg whites until soft peaks are formed
Incorporate the egg white into the chocolate mix and refrigerate
Serve with extra chocolate shavings or nuts
