11. It’s Julia’ Leeks and Potatoes
You can clear your throat and call it with as much French as you can muster, Potage Parmentier. Now that was fun.

Ingredients

1 tbsp bacon fat everything tastes great with it

1 cup chopped onion

1 cup chopped leeks white part only

500g Yukon potatoes diced

1 ¼ l stock your choice

1 cup cooking cream

Salt and pepper to taste
Method
Sauté the onion in the bacon fat until soft and translucent
Add the leek and potatoes to cook for 5 minutes
Add the stock and cover it to cook until everything is breaking apart
Pour the cooked mixture into a blender and whisk
Return the smooth blender mix to the pan and whisk in the cream
Season to taste. Serve with a sprinkle of pepper
