16. Another Lobster Dish
This bisque is absolutely amazing for cold date nights or when you want to think up your next big idea.

Ingredients

3 lobster tails

1 ½ l water

1 large bouillon cube

1 cup rice wine
For the bisque
Method
Add the lobster tails in water and cook until deep orange
Remove the lobster, cool extract the meat
Add the shells to the pan; add the rice wine, bouillon cube with salt pepper
Reduce until a dark, rich sauce is achieved in 25 minutes, strain and set aside
Add 3 tbsp butter to the pan; cook the carrots, celery, and onion for 6 minutes
Stir in the flour and the rest ingredients except the lobster
Blend to a smooth emulsion; allow it to simmer, and then add the lobster meat
Season and serve
