2kg boneless beef chuck in cubes

¼ cup butter

1 cup onion chopped

2 cups carrots

2 cups baby mushrooms cut

500g baby potatoes

2 cups red wine

1 cup beef broth

½ cup tomato sauce

1 tbsp tomato paste

1 tsp minced garlic

2 bay leaves

6 tbsp flour

1 small red chili chopped

1 sprig of thyme

Salt and pepper

Parsley to garnish
Method
Melt the butter and brown the beef. Remove and set aside
In the same pan, add the onion, potatoes, carrots, mushroom, and chili to cook for 5 minutes
Pour out and return the same pan to heat, deglaze the pan with a little red wine, add the remaining stock, and stir in the flour
Add the tomato sauce and paste and return the beef and vegetables
Add the remaining Ingredients
to the pan. Cover and cook in the oven until done
Garnish with parsley and serve
